  1. Preheat the oven to 350°F. Grease a standard size muffin tin or line with parchment paper liners and set this aside. In a large bowl, whisk together the applesauce, maple syrup, eggs, butter and vanilla and set that aside.
  2. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg and salt. Pour the dry ingredients into the wet and use a rubber spatula to mix until just combined. Then fold in the oats and the walnuts.
  3. Scoop the batter evenly into the muffin tins and bake for 15-22 minutes, or until a toothpick comes out of the centers clean. Then, remove them from the oven, let them cool in the pan for 5 or so minutes, then pop them out of the pan and place them on a cooling rack to cool completely.
